Modern Italian Cuisine
Colombian born, Julian Velasquez is one of Adelaide’s up and coming chefs. Julian’s passion with wine and food was influenced by his family’s love of organic sustainable produce. Studying international relations in Australia 10 years ago, his first love and obsession with gastronomy gradually started taking hold and he made the ultimate decision to follow his path and destiny.
It came as a bit of a shock to his family at first (organic coffee growers from “Villa Cocha” in Gacheta Cundinamarca) but they knew that it was the path that Julian needed to follow.
His mentor Javier Codina of “Moda” Brisbane encouraged him to strive harder and to develop a palate for the best and finest ingredients. So when he came to the Universal Wine Bar it was just a natural fit with Vito now as his guide to South Australian’s fine wine and food. Nurturing and encouraging him to combine his Colombian Heritage and infuse it with his take on Traditional yet modern Italian cuisine.
Julian is supported by an international kitchen team all equally passionate and dedicated to the craft of producing fresh, simple quality food that is perfectly pared with wine.
As quoted by Carlo Petrini the Italian founder and president of the Slow Food movement,
“Excellent food does not need to be complicated or expensive. It can be very simple…… The most important thing about eating is to enjoy the moment of affection between family members, or friends or work colleagues. A civilization that loses this ritual becomes very poor. Traditionally making food is an act of love, it’s to be savored, shared and appreciated, a civilized thing to do take in the pleasure of eating or drinking a glass of wine.”
The ambience created by the timber furnishings and folding glass doors give the impression of an exclusive club, but this is a club anyone can join. Patterned after Willi's Wine Bar in Paris the Universal sets the standard for sophisticated wine tasting.
The Universal has an enviable reputation for its amazing selection of wines.
